CHARACTER
Elegant and expressive, Awamori reveals its distinctive character from the very first impression.
Long-aged expressions develop notes of vanilla, roasted nuts and dried fruit, creating a rich and lingering bouquet.

With time, aromas become richer and flavours grow softer and more complex.
The tradition of ageing Awamori to create kusu—long-aged Awamori—is one of the defining characteristics of Okinawan spirits.
Crafted in Okinawa for over 600 years, Awamori has long been part of everyday life and special celebrations alike.
Passed down through generations, it remains a treasured part of Okinawa's cultural heritage.
CRAFT
Awamori’s distinctive character is shaped by every step of its making.
From black koji and traditional all-koji fermentation to single distillation and careful ageing, each stage contributes to the aromas, depth, and complexity that make Awamori unique.
The rice is carefully washed, soaked to achieve the ideal moisture level, and evenly steamed. This essential first step provides the best possible foundation for cultivating black koji mold.
Black koji mold is cultivated on the steamed rice for about two days. The citric acid produced by the koji supports stable fermentation while developing Awamori's distinctive aroma, richness, and depth.
The finished rice koji is mixed with water and yeast, then slowly fermented. Awamori's unique all-koji fermentation method draws out the full flavour of the rice, creating a smooth and complex taste.
The fermented mash is distilled once in a traditional pot still. This single distillation preserves the natural aromas and flavours, producing a spirit with the bold character that makes Awamori unique.
As Awamori matures, its edges gradually soften, developing a smooth, mellow character. Its aroma also deepens, revealing elegant notes of vanilla, roasted nuts, and dried fruit.
The alcohol content is carefully adjusted before Awamori is bottled and shipped. Awamori aged for three years or more is known as kusu (aged Awamori) and is valued for its deeper aromas and richer flavours.
